If you have downloaded ';contacts'; you might be able to alter the eyes in the mirror. I've never tried, but I saw something that claimed to change eye color in the game. Check free download sites -

If you're talking about ';Nightlife';... I don't think you can. Maybe theres a mod? Try going to a vanity mirror with your Sim and try and change the color?
i don't think that you are able to.
